PRODUCTION SITE: Our Vespolina vineyard is located in the “Pianazze” region, on the Briona hills, the total surface is around 7000 m2. The soil is composed by a surface layer of clay and silt that are replaced by sand and stones in the deeper section. The exposure is optimal in this area, The sun and the breeze coming from the Monte Rosa result in an ideal climate for the grapes maturation process. Year of implant 2001.

VARIETY: Vespolina 100% farmed with the Guyot system.

HARVEST: Grapes were handpicked using baskets of c.ca 20 kg each, on the 23rd of September. 2019 has been a hot vintage, but overall balanced here in Alto Piemonte. Only at harvest time the vines were getting into a little hydric stress, this made the grapes drier than usual as well as being more concentrated, resulting in a lower wine yield, but of great quality.

VINIFICATION: Clusters were softly destemmed, and the alcoholic fermentation was conducted by indigenous yeasts for 8days in a stainless-steel tank with controlled temperature. The emerged fermentation hat was always kept moist with careful and delicate “pump-over” twice a day until racking. The aging in steel was prolonged until the bottling, which occurred in March 2020.

TASTING NOTES

COLOUR: intense red with violet hints, bright.

BOUQUET: intensely vinous, with notes of forest red fruits and white pepper spice.

FLAVOUR: dry, full-bodied and persistent with a pleasant bitter end, which enhances the fine spiciness so typical of this variety.

FOOD PAIRINGS: typically combined with local salami and cheeses, it’s acidity and tannins makes it perfect to clean the mouth between the bites.
